- 4 medium zucchini*
- 2 medium onions*
- 1/4 cup extra virgin olive oil
- freshly ground pepper
- freshly ground salt
- Slice zucchini long ways into 1/4 inch thick slices. Peel onions and slice into 1/4 rings.
- Coat zucchini and onion slices in oil and sprinkle with salt and pepper.
- Grill for 3 minutes on each side at medium-high heat.
