Irish Guinness Beef Stew

A few summers ago, my husband and I spent 10 days traveling throughout Ireland. One of our favorite things to do, after a long day of urban or rural hiking, was to find a pub and have a pint of Guinness, followed by a bowl of hearty, Guinness beef stew and listen to live music. This recipe is based on The Irish Pub Cookbook, that I picked up while in Ireland. To make it healthier, I reduced the butter, oil, and beef, and increased the vegetables. Plus I added some tomato paste and red wine vinegar for some extra flavor.

Serve over a bowl of mashed potatoes.

INGREDIENTS

  • 1 1/2 lb sustainably raised, organic boneless beef sirloin, cut into 1-inch cubes
  • salt and freshly ground pepper
  • all-purpose flour for dredging
  • 3 tbsp unsalted butter
  • 3 tbsp extra virgin olive oil
  • 4 medium onions
  • 2 cups beef stock
  • 1 (14.9 oz) can Guinness stout
  • 5 carrots, peeled and thickly sliced
  • 4 parsnips, peeled and thickly sliced
  • 4 medium turnips, peeled and cut into 1-inch pieces
  • 1-2 tbsp organic tomato paste
  • 1-2 tbsp red wine vinegar
  • 3 tbsp flour

DIRECTIONS

  1. Season the meat with salt and pepper and dredge in flour. In a stockpot or large saucepan over medium heat, melt the butter with the oil. Working in batches, cook the meat on all sides for 5-7 minutes, or until evenly browned. Remove from the pot. Stir in onions and cook 3-5 minutes, or until soft.
  2. Return all the meat to the pot and add enough of the beef broth and the Guinness to cover. Bring to a boil, reduce the heat to medium-low, cover and simmer for 60-70 minutes,  or until the meat is nearly tender. Add the carrots, parsnips, turnip, and tomato paste and cook for 30-40 minutes, or until the vegetables and meat are tender and the stew begins to thicken.
  3. Mix 3 tbsp flour with 1/2 cup of stew liquid in a small bowl. Stir into the stew and cook for 5 minutes longer.
  4. Add red wine vinegar, season with salt and pepper to taste, stir, and remove from heat.
  5. Serve over mashed potatoes in shallow bowls.

Red, White & Green Salad

A lovely, colorful and crunchy early summer salad. (* Indicates PVF produce and ** indicates Star Hollow Farm produce. For more information about what we are doing with our PVF CSA share, click here.))

INGREDIENTS

  • 1 head of lettuce*
  • 4-6 spring, salad white turnips, thinly sliced with skins*
  • 3-4 green onions**
  • 1/2 cup sugar snap peas, cut in half*
  • 1 bunch of raw baby beets, thinly sliced with or without skins*
  • 2 tbsp crumbled feta cheese
  • 1-2 tbsp lemon garlic vinaigrette

DIRECTIONS

  1. Tear lettuce leaves, and rinse well. Spin in a salad spinner to remove excess water (This is essential for great tasting salads. Extra water can water down the salad dressing and compromise the flavor of the salad.)
  2. Thinly slice the turnips and raw beets (no need to peel spring turnips or beets – you can eat their skins too) and chop the green onion.
  3. Toss lettuce through vinaigrette in a large bowl. Sprinkle with feta cheese and serve immediately.

Green & White Salad

This is such a simple, yet delicious salad. This recipe also tastes great with radishes, beets, and other spring vegetables. (* Indicates PVF produce and ** indicates Star Hollow Farm produce. For more information about what we are doing with our PVF CSA share, click here.))

  • 1 head of red leaf lettuce*
  • 4-6 spring, white turnips*
  • 3-4 green onions**
  • 2 tbsp crumbled feta cheese
  • 1-2 tbsp lemon garlic vinaigrette

DIRECTIONS

  1. Tear lettuce leaves, and rinse well. Spin in a salad spinner to remove excess water (This is essential for great tasting salads. Extra water can water down the salad dressing and compromise the flavor of the salad.)

Ryba (Fish)

This recipe was inspired by Wigilia – a Polish Christmas Eve Celebration. As a kid my mom would prepare some type of simple white fish dish. I put together this recipe the first year I celebrated Wigilia away from my mom. The recipe is simple, but delicious and uses several seasonal vegetables available in a autumn/winter CSA.

INGREDIENTS

  • 2 tbsp dry white wine
  • 1 1/2 tbsp lemon juice
  • 1/4 cup fresh dill, chopped
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp freshly ground pepper
  • 1/2 tsp kosher salt
  • 1/2 large sweet onion, thinly sliced
  • 3 organic carrots, cut into 2 inch julienne strips
  • 3 small, organic turnips, peeled and cut into 2 inch julienne strips
  • 4 medium filets of tilapia or flounder
  • Salt and pepper

DIRECTIONS

  1. Preheat oven to 450 degrees F.
  2. Combine wine through salt, mix well and set aside.
  3. In a large 13X9″ baking dish toss sauce and julienned vegetables.
  4. Roast vegetables in oven for 20 minutes – stirring every 5 minutes.
  5. Sprinkle a little salt and pepper on both sides of each filet of fish. Gently lay the fish filets on top of the roasted vegetables. Slightly cover the filets with some of the roasted vegetables.
  6. Bake at 450 degrees for 5 minutes. Flip the fish filets and bake an additional 5 minutes or until the fish are flaky and firm to the touch.
