Spanish Chorizo Bean Saute with Farro

My husband and I recently discovered Tru Roots Sprouted Bean Trio, a quick-cooking blend of lentils, adzuki, and mung beans. We always seem to forget to pre-soak dried beans, and therefore rarely end up using them. We like this quick-cooking variety, because in about 20 minutes you can cook these beans. We have been experimenting with how to use them and love this quick Spanish Chorizo Bean Saute with Farro recipe.

INGREDIENTS

  • 2 tbsp extra virgin olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 large carrots, diced
  • 2 red bell peppers, diced
  • 1 jalapeño, chopped (remove half of the seeds)
  • 1 1/2 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp crushed red pepper
  • 1 cup farro (an Italian grain, simliar to spelt)
  • 4 links organic chorizo sausage (pork or chicken)
  • 2 cups cooked small red beans, or a mixture (such as Tru Roots Sprouted Bean Trio)
  • 1 can organic diced tomatoes, drained
  • 1/2 bunch cilantro, chopped
  • salt
  • pepper

(Variations: Try adding diced sweet potato, new potatoes, and celery.)

DIRECTIONS

  1. In a large skillet over medium-high heat, saute onion through jalapeño in the olive oil until tender. Add cumin through crushed red pepper and saute for 1 additional minute. Remove from pan and set aside.
  2. Meanwhile, add 1 cup farro into a medium saucepan. Cover with water. Bring to a boil and simmer for 30-40 minutes. Drain excess water in a colander, return to saucepan and season with 1 tsp extra virgin olive oil and salt and pepper to taste.
  3. Over medium-high heat, saute chorizo until cooked through (approximately 4 minutes per side). Remove from pan and set aside. Cut into 1/4 inch slices.
  4. Return vegetable mixture and chorizo to pan, add beans and tomatoes. Cook for 4-5 minutes, until the mixture is heated through.
  5. Add cilantro and season with salt and pepper.

Mushroom Barley Soup

This hearty vegan soup is fabulous comfort food for a cold winter day. It’s packed with flavor and texture. If you’re not vegan, don’t worry…you’ll fall in love with this soup! Eat this for dinner, or for lunch. It reheats well and stays good for a week in the fridge.

INGREDIENTS

  • 2 tbsp extra virgin olive oil
  • 1 large onion or 2 medium leeks, diced or chopped
  • 1 lb. baby bella mushrooms, washed and thinly sliced
  • 1 medium celery root (also known as celeriac)
  • 2 large carrots, diced
  • 1 very small cabbage, or 1/2 medium cabbage, finely shredded and chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp tomato paste
  • 4 cups vegetable broth (use organic chicken broth if you aren’t vegan or vegetarian)
  • 2 cups water
  • 1/2 cup white wine
  • 1 cup organic pearled barley
  • 1 tbsp balsamic vinegar
  • 1 tbsp cream white balsamic vinegar
  • salt and pepper to taste

DIRECTIONS

  1. In a large stockpot, heat oil over medium-hight heat. Add onions and cook until brown, about 10 minutes. Add mushrooms and cook for another 5-10 minutes, until they are tender.
  2. Add celery root through wine. Bring to boil. Add barley. Return to a boil, and reduce heat. Simmer, covered for 45 minutes to 1 hour, stirring occasionally.
  3. Stir in both vinegars and season with salt and pepper to taste.

Japanese Shiitake & Cabbage Stew with Udon Noodles

Adapted from Udon with Mushroom Broth, Cabbage and Yams

INGREDIENTS

  • 6 cups organic vegetable broth
  • 2 cups water
  • 3/4 cup thinly sliced peeled fresh ginger
  • 2 lemongrass stalks, outer dark layers removed, all but bottom 4 inches cut off and discarded
  • 2 6-inch strips dried seaweed (kombu)
  • 1 tbsp dried japanese red pepper (tokai togarashi wagiri)
  • 2 tbsp tamari soy sauce
  • 1 tbsp unseasoned rice vinegar
  • 1 medium onion, diced
  • 10 ounces fresh, shiitake mushrooms
  • 1 cup sliced garlic greens (or green onions)
  • 4 cups 1/2-inch-wide crosswise slices cored Napa cabbage
  • 2 cups slender carrots, peeled, thinly sliced on diagonal
  • 10 ounces Japanese-style udon noodles or soba noodles
  • 1 1/2 cups coarsely chopped fresh cilantro
  • 4 to 6 ounces semi-firm tofu, cut into 1/2-inch cubes (optional)
  • Tamari soy sauce

DIRECTIONS

  1. Bring broth and water to simmer in large pot over medium heat. Add ginger through red pepper. Cover; simmer about 30 minutes.
  2. Meanwhile, in a large non-stick pan, saute onions, mushrooms and garlic greens in 1 tbsp oil over medium high heat until mushrooms are tender (about 5-10 minutes). Set aside.
  3. Prepare udon noodles according to package instructions. Set aside.
  4. Using tongs, remove kombu; discard kombu. Strain broth through fine-mesh strainer into another large pot; discard solids (except for ginger pieces) in strainer. Chop ginger pieces and add back to pot.
  5. Add chopped carrots, onion/mushroom mixture, and cabbage to the broth. Bring to a boil, reduce heat and simmer until carrots and cabbage are crisp tender, about 4-5 minutes.
  6. Add cilantro, tofu, tamari, and rice vinegar to broth and stir. Season with salt and pepper.
  7. Using tongs, divide noodles among bowls. Ladle broth over and serve.

NOTES

Lemongrass, an herb that resembles a green onion, has a mild lemony flavor.

Kombu (a.k.a. kelp) is a variety of seaweed that’s often used for making stock. It’s usually sold dried.

Tokai Togarashi Wagiri is a type of japanese dried red pepper (be careful, it’s extremely HOT)

Tamari is a dark sauce made from soybeans.

Udon is a thick wheat-or corn-based Japanese noodle.

Irish Guinness Beef Stew

A few summers ago, my husband and I spent 10 days traveling throughout Ireland. One of our favorite things to do, after a long day of urban or rural hiking, was to find a pub and have a pint of Guinness, followed by a bowl of hearty, Guinness beef stew and listen to live music. This recipe is based on The Irish Pub Cookbook, that I picked up while in Ireland. To make it healthier, I reduced the butter, oil, and beef, and increased the vegetables. Plus I added some tomato paste and red wine vinegar for some extra flavor.

Serve over a bowl of mashed potatoes.

INGREDIENTS

  • 1 1/2 lb sustainably raised, organic boneless beef sirloin, cut into 1-inch cubes
  • salt and freshly ground pepper
  • all-purpose flour for dredging
  • 3 tbsp unsalted butter
  • 3 tbsp extra virgin olive oil
  • 4 medium onions
  • 2 cups beef stock
  • 1 (14.9 oz) can Guinness stout
  • 5 carrots, peeled and thickly sliced
  • 4 parsnips, peeled and thickly sliced
  • 4 medium turnips, peeled and cut into 1-inch pieces
  • 1-2 tbsp organic tomato paste
  • 1-2 tbsp red wine vinegar
  • 3 tbsp flour

DIRECTIONS

  1. Season the meat with salt and pepper and dredge in flour. In a stockpot or large saucepan over medium heat, melt the butter with the oil. Working in batches, cook the meat on all sides for 5-7 minutes, or until evenly browned. Remove from the pot. Stir in onions and cook 3-5 minutes, or until soft.
  2. Return all the meat to the pot and add enough of the beef broth and the Guinness to cover. Bring to a boil, reduce the heat to medium-low, cover and simmer for 60-70 minutes,  or until the meat is nearly tender. Add the carrots, parsnips, turnip, and tomato paste and cook for 30-40 minutes, or until the vegetables and meat are tender and the stew begins to thicken.
  3. Mix 3 tbsp flour with 1/2 cup of stew liquid in a small bowl. Stir into the stew and cook for 5 minutes longer.
  4. Add red wine vinegar, season with salt and pepper to taste, stir, and remove from heat.
  5. Serve over mashed potatoes in shallow bowls.

Mexican Lentil Stew with Roasted Garlic & Tomatillos

This deliciously savory stew combines mexican flavors with hearty lentils and an assortment of colorful fall vegetables.

INGREDIENTS

  • 2 tbsp plus 1 tsp extra virgin olive oil, divided
  • 1 whole head garlic
  • 1 pint tomatillos, quartered
  • 2 jalapenos, halved lengthwise
  • 2 cups lentils
  • 1 1/2 tsp ground cumin
  • 3/4 tsp ground coriander
  • 1 tsp oregano
  • 1 large onion, chopped
  • 4 large carrots, sliced
  • 4 small bell peppers, chopped
  • 1 (14 1/2 oz) can Muir Glen fire roasted diced tomatoes, undrained
  • 8 cups organic chicken broth
  • 1 bunch fresh cilantro, rinsed
  • 3 links organic, chicken sausage
  • 2 bay leaves
  • 1 tsp white wine vinegar

DIRECTIONS

  1. Preheat toaster oven to 325 degrees F.
  2. Remove white papery skin from garlic head (do not peel or separate cloves). Rub 1 tsp oil over garlic head and wrap in aluminum foil. In a small baking dish lined with aluminum foil, add tomatillos and jalapeno peppers, coat evenly with cooking spray.
  3. Bake tomatillos/jalapeno peppers at 325 for 20 minutes or until they being to brown (stirring occasionally) and place in a large bowl and set aside; in same oven, bake garlic for 1 hour. Separate cloves; squeeze to extract garlic pulp in the large bowl with roasted tomatillos. Set aside.
  4. While garlic and tomatillos/jalapenos are roasting, heat 2 tbsp oil in a large saucepan over medium-high heat. Add onion and carrots; saute 5 minutes or until softened. Stir in broth, bell peppers, cumin, coriander, oregano and bay leaves. Bring to a boil. Cover, reduce heat and simmer for 25 minutes.
  5. Meanwhile, combine garlic and roasted tomatillos/jalapeno peppers and cilantro in a blender or food processor. Pulse until well blended. Add mixture to lentils. In a large skillet, saute chicken sausage until browned. Add to lentils.
  6. Simmer lentils for an additional 15 minutes or until lentils are tender.
  7. Remove and discard bay leaves. Place 2 cups lentil mixture in a blender (make sure to pick out any pieces of sausage – you do NOT want to blend any of these pieces). Process until smooth. Return pureed mixture to pot, stir well. Stir in vinegar
  8. Serve with cornbread or Green Chili Cheddar Cornmeal Muffins.

Moroccan Carrot Salad

Yogurt, mint and cilantro add a wonderful flavor to lightly steamed carrots. (*Indicates Potomac Vegetable Farm (PVF) produce. For more information about what we are doing with our PVF CSA share, click here.)

Adapted from Flatbread & Flavors by Jeffrey Alford and Naomi Duguid.

INGREDIENTS

  • 1 tsp ground cumin
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 tsp kosher salt
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1/4-1/2 tsp sugar
  • 3 tbsp plain greek yogurt
  • 2 pounds carrots, thinly sliced and steamed just until tender (about 5 minutes)
  • fresh ground pepper

DIRECTIONS

  1. In a mortar, grind cumin through salt until well blended. Transfer to a large bowl.
  2. Add oil, vinegar and sugar to the spice mixture and mix well. Slowly stir in yogurt.
  3. Toss steamed carrots with yogurt/spice mixture until well coated.
  4. Serve salad immediately or refrigerate for up to 2 hours. Bring to room temperature before serving.

Carrots and Pineapple Cabbage Salad

INGREDIENTS

  • 2 tbsp lemon juice
  • 1/4 cup orange juice
  • 1/4 tsp kosher salt
  • 3 tbsp extra virgin olive oil
  • 1 small cabbage, very thinly sliced*
  • 1 cup coarsely grated carrot**
  • 1 cup pineapple chunks in unsweetened juice, drained

DIRECTIONS

  1. In a large bowl, whisk together the lemon juice through oil.
  2. Add the cabbage, carrots and pineapple and toss.
  3. Serve immediately or refrigerate until ready to serve.

Eastern European Potato Salad

This is a simple, Eastern European inspired potato salad that tastes delicious warm or room-temperature. It’s a great recipe for the spring to use up cold-storage root vegetables, such as parsnips and carrots, and new spring crops, such as fingerling potatoes, leeks, garlic greens, and fresh herbs. (*Indicates CSA and farmers’ market produce.)

INGREDIENTS

  • 1 lb fingerling potatoes*, washed and scrubbed well, cut into 1/4″ slices leaving skins on
  • 3 parsnips*, chopped
  • 4 carrots*, sliced (yellow, orange, red or purple, or a mixture)
  • 3 small leeks* (white parts only)
  • 2 garlic greens*, chopped (white and green parts)
  • 3 tbsp extra virgin olive oil
  • 1/2 cup fresh herbs (such as dill and chives)
  • 1 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt

DIRECTIONS

  1. Preheat oven to 425 F.
  2. Combine potatoes through olive oil in a 9X13″ baking dish. Bake at 425 F for 30-45 minutes, stirring every 10 minutes, or until vegetables are tender and potatoes are golden brown.
  3. Toss with herbs through salt.
  4. Serve warm or at room-temperature.

Spring is here! While most CSA subscribers in the region do not start receiving their weekly bounty until the beginning of June, Star Hollow Farm started this weekend. As a Star Hollow Farm CSA member, every Wednesday from the beginning of April through end of December I will be able to order a weekly CSA harvest box and additional a la carte items (produce and dairy).

Here’s what was in my April 3, 2010 harvest box:

Baby Mizuna (a variety of Japanese mustard, usually served raw in salad mix)

Organic Carrot Cake with Cream Cheese Frosting

Don’t be intimidated by this 2 layer, 99.9% organic cake! It is probably one of the easiest cakes to make – even my husband with is rudimentary baking skills can make this delicious dessert. And one of the best things about this recipe…it has half the fat of the typical carrot cake recipe, because it substitutes all-natural organic apple sauce for half of the canola oil. Enjoy!

INGREDIENTS

Dry Ingredients

  • 1 1/2 cups organic cane sugar
  • 2 cups all-purpose, organic flour
  • 2 tsp organic cinnamon
  • 2 tsp organic baking powder
  • 2 tsp organic baking soda
  • 1 tsp kosher salt
  • 1/2 cup organic walnuts or pecans

Wet Ingredients

  • 3 cups peeled and grated organic carrots
  • 1/2 cup all-natural, organic applesauce
  • 1/2 cup organic canola oil
  • 2 free-range, organic eggs*

Cream Cheese Frosting

  • 1 tbsp organic butter, chilled
  • 1 (8 oz) package organic cream cheese (preferably Neufchatel cheese – also called 1/3 less fat cream cheese)
  • 1 lb package organic powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp grated organic lemon rind

DIRECTIONS

  1. Preheat oven to 350 degrees. Using cooking spray, evenly coat 2 round, 8-inch cake pans and lightly dust with flour.
  2. Mix all dry ingredients together in a large mixing bowl.
  3. Mix all wet ingredients together in a separate bowl. Add wet ingredients to dry ingredients and mix well (note: batter will be very stiff).
  4. Spread the batter evenly into TWO round, 8-inch baking cake pans.
  5. Bake at 350 degrees for about 40 minutes or until a toothpick inserted into the middle of each cake pan comes out clean. Let cool in pans for 5-10 minutes on a wire rack. Loosen cake layers from sides of pans using a narrow spatula or plastic knife; turn out onto wire racks; and let cool completely (about 30 minutes to 1 hour).
  6. Meanwhile, prepare the frosting. Beat butter and cream cheese at high speed of a mixer in a large bowl until fluffy. Gradually add powdered sugar, vanilla and lemon rind; beat at low speed until just blended (do not overbeat, or icing may become runny). Cover and chill.
  7. To frost the cake, place 1 cake layer on a large plate. Spread about 1/3 the cream cheese icing on top of the layer; spreading carefully from the center out to just the edges of the cake layer (it is easiest to use a large knife). Top with the second cake layer and repeat, however this time use all the remaining icing and spread the icing over the sides/edges of the cake layer, making sure to evenly spread the remaining icing over the sides and top of the cake.
