Light, crispy and refreshing!

- 2 tbsp lemon juice
- 1/4 cup orange juice
- 1/4 tsp kosher salt
- 3 tbsp extra virgin olive oil
- 1 small cabbage, very thinly sliced*
- 1 cup coarsely grated carrot**
- 1 cup pineapple chunks in unsweetened juice, drained
- In a large bowl, whisk together the lemon juice through oil.
- Add the cabbage, carrots and pineapple and toss.
- Serve immediately or refrigerate until ready to serve.
