Serve these hearty mashed potatoes with Irish Guinness Beef Stew.
- 2 ¾ to 3 lbs russet potatoes, peeled and cut into 1 inch pieces
- ¼ cup half and half
- ¼ cup skim milk
- 2 tbsp butter
- ½ cup freshly grated parmesan cheese
- salt and pepper
- Prepare potatoes in a pressure cooker.
- Mash in a large bowl with half and half through parmesan cheese. Season with kosher salt and freshly ground pepper to taste.
