Indian Feast

This summer Indian feast features vegetarian and vegan recipes and a variety of strong, savory flavors. If you are new to Indian cooking, I highly recommend two amazing cookbooks--From Curries to Kebabs: Recipes from the Indian Spice Trail and World-of-the-East Vegetarian Cooking–both by Madhur Jaffrey. Unfortunately, most regular grocery stores do not carry the spices needed to make these dishes. Try to find your community’s food coop, a Whole Foods store, or order the spices online at a place like Penzeys Spices.

Cucumber, Mint & Basil Raita

Serve with white basmati rice.
