Carrots and Pineapple Cabbage Salad

Light, crispy and refreshing!

INGREDIENTS

  • 2 tbsp lemon juice
  • 1/4 cup orange juice
  • 1/4 tsp kosher salt
  • 3 tbsp extra virgin olive oil
  • 1 small cabbage, very thinly sliced*
  • 1 cup coarsely grated carrot**
  • 1 cup pineapple chunks in unsweetened juice, drained

DIRECTIONS

  1. In a large bowl, whisk together the lemon juice through oil.
  2. Add the cabbage, carrots and pineapple and toss.
  3. Serve immediately or refrigerate until ready to serve.

    The recipe sounds healthy and simple. It is very interesting to know that cabbage and pineapple can be a great combination. Thanks for sharing.
