This is a great, seasoned rice to serve with Asian stir-fry, such as Tofu Stir-Fry with Green Vegetables and Peanuts or to make sushi.

INGREDIENTS

  • 1 1/2 cups sushi rice
  • 2 cups water
  • 1 1/2 tbsp rice wine vinegar
  • 1 1/2 tbsp sugar
  • 3/4 tsp salt

DIRECTIONS

  1. Combine rice and water in a medium pot with lid. Bring to a boil, reduce heat to simmer, stir once, cover and cook for 20 minutes. Remove from heat, and let sit, covered for an additional 10 minutes.
  2. In a small bowl, combine vinegar, sugar and salt and microwave for 30 seconds. Stir until sugar and salt are dissolved. Add vinegar mixture to cooked rice. Stir and fluff rice with a fork. Rice will be very sticky.
